Spring Cleanse Dressing

This dressing is my latest creation and I’ve found it absolutely amazing and versatile. You can have it in a salad, soups, on toast or simply with raw vegetables. I usually like to fill an avocado with LOADS of it and sprinkle with chilli flakes. It’s delightful!

This recipe is raw, vegan and gluten-free.

Ingredients

100 g cashews
juice of one lemon
2 cloves of garlic
5 tbsp of olive oil
1 tbsp of fresh grated ginger
1 tsp of ground coriander
1 tsp ground turmeric
salt and pepper
pinch of chilli flakes
1 can of coconut milk

Method

1) Soak the cashews in hot water for 15 minutes.
2) Place all the ingredients in a food processor and let it blend until very smooth.
3) Store it in the fridge.
