Grapefruit is high in fibre and low in calories. It’s a great fruit for those on a calorie restricted diet and can also help ease constipation due to its fibre content.
In addition, grapefruit is also an excellent source of vitamin C, which helps to support the immune system. This recipe is a great at any time of the day. Perfect as a breakfast or even a healthy snack or pudding.
This recipe is gluten and dairy-free.
Ingredients (serves 2):
1 ripe mango
2 tbsp of chia seeds
1 tbsp of goji berries
1 tbsp of flaxseeds
2 tbsp of desiccated coconut
2 tbsp of honey or coconut sugar
1) Peel and cut the fruit. Place it in a blender. Add a tiny bit of water and the sweetener. Blend until smooth.
2) Place the mousse in a bowl and add the other ingredients (chia and flaxseeds, goji and coconut). Mix well.
3) Pour your mousse into 1 or 2 jars (with lids) and place them in the fridge to soak overnight or for at least 4 hours.
4) You can eat this mousse plain, with some granola or as a topping on your porridge. It’s absolutely delicious!
