With so many fantastic granola recipes around at the moment, I thought I’d share my super healthy granola which is packed with nutrients and is so simple to put together; I literally mix up all the ingredients and put them in the oven!
This recipe is gluten-free, lactose-free and is also suitable for vegans.
Every single ingredient in this granola has fantastic health benefits, here are just a few:
Linseed – high in fibre, great for digestive health (mainly constipation and irritable bowel syndrome)
Sunflower seeds – High in vitamin E, iron and magnesium which is great for bone and heart health
Pumpkin seeds – High in magnesium, iron and zinc which supports the body’s immune system. Pumpkin seeds have a diverse mixture of antioxidants.
Ingredients (I try to use organic wherever possible)
4 cups organic whole grain rolled oats
1 cup sunflower seeds
1 cup pumpkin seeds
1 cup of chopped nuts (I use pecan and hazelnut)
1 cup of almond flakes
1 cup of mixed seeds (I use golden linseed, brown linseed, chia seeds, black sesame seeds, poppy seeds and nigella seeds)
Generous drizzle of organic, extra virgin coconut oil
1 tbs cinnamon
Coconut syrup (optional)
1) Preheat oven to 180°C
2) Mix all the dry ingredients in a baking tray (except the desiccated coconut)
3) Drizzle the melted coconut oil over and mix thoroughly
4) Put in the oven for 40 mins or until the mixture is a lovely golden brown. (Mix the mixture halfway to get an even coverage)
5) Add the desiccated coconut and mix thoroughly.
If you like a sweet granola, add some delicious coconut syrup.
Allow the granola to cool and store in an airtight container.
