Vegan & Gluten-free Banana Cacao Cake

Banana Cacao Cake

This delicious cacao banana cake is simple to make and is suitable for vegans and those who are gluten-free. It also has all the benefits of raw cacao, which include being an excellent source of vitamins, minerals, anti-oxidants and phyto-nutrients. Raw cacao is particularly rich in magnesium and iron.

This recipe is vegan, gluten-free and has no refined sugar.

Ingredients (serves 10):

For the cake:

– 3 ripe bananas
– 2 cups of gluten free oats
– 1 cup of ground almonds
– 1/2 cup rice milk
– 1/2 cup olive oil
– 4 tbsp of raw cacao
– 1 tbsp of ground ginger
– 3 tbsp of honey
– pinch of salt
– 1tsp of baking powder

For the chocolate layer:

– 8 tbsp of raw cacao
– 1 cup of rice milk
– 5 tbsp of honey
– 2 tsp of ground ginger
– 1 tsp of agar
– pinch of salt

Method:

For the cake:

  1. Place all the cake ingredients in a food processor and blend until everything has been combined together.
  2. While the mixture sits, heat up the oven to a medium temperature and grease a baking dish with a little olive oil.
  3. Pour the mixture into a lined baking dish and bake at 150 C for about 40 minutes, until the top becomes ever so slightly brown and a knife can be stuck in and removed without any batter sticking to it.
  4. Allow it to cool for about 10 minutes before removing the cake from the pan.

For the chocolate layer:

  1. Add all the ingredients in a pan. Stir gently until melted.
  2. After the sauce cools spread the chocolate layer on top of the cake.

Note: As an additional topping sprinkle the cake with some cacao nibs, hemp seeds, chia seeds and rose petals.
